Single origin mānuka from the Bay of Islands, cold creamed rather than heated.
Honey Paihia keep their hives around Paihia and the Far North, and this honey is gathered from wild mānuka growing there. It is never blended with honey from anywhere else, which is what single origin means and what most supermarket mānuka cannot say.
The 800+ MGO grade holds at least 800 milligrams of methylglyoxal per kilogram, the compound mānuka is graded on. That works out at close to 20+ on the older NPA scale. Every batch is tested by infrared spectroscopy. Slightly medicinal, in the way a high grade mānuka is meant to be.
Cold creaming is the other thing worth knowing. The honey is stirred slowly over days rather than heated, so it ends up spoonable and smooth instead of runny or set hard.
