Citrus pectin put through a proprietary process that reduces the molecular weight of the pectin molecule to an average of around 30 kilodaltons.

That reduction is the product. Ordinary citrus pectin is a large molecule and behaves completely differently; modified citrus pectin is defined by its molecular weight and its low methoxylation, both of which are specified rather than left to chance.
