This is a liquid concentrate rather than a powder, so no water or dissolving is required. Shake the bottle before use and add a drop at a time, mixing thoroughly, until the green you want appears. Stockists suggest around half a teaspoon per 250g of pure white icing as a starting point, and a white base gives the truest shade.
Adjusting the acidity of the mixture shifts the tone, so a little lemon juice or citric acid helps when working with alkaline ingredients such as egg and milk. Suited to icing, buttercream, fondant, jelly, tinted coconut and no-bake desserts rather than baked batters, as the colour fades with heat. Trial your mixture before an occasion.
