Green never comes from a single plant. Here it is safflower's yellow layered over spirulina's blue-green, blended until the shade lands somewhere between soft sage and Christmas-tree deep.
Bakers reach for it in December, for mint-slice icing, and for tinting desiccated coconut into grass on a birthday cake. Water-extracted, no solvents, no synthetic dyes.

Adjusting the acidity of the mixture shifts the tone, so a little lemon juice or citric acid helps when working with alkaline ingredients such as egg and milk. Suited to icing, buttercream, fondant, jelly, tinted coconut and no-bake desserts rather than baked batters, as the colour fades with heat. Trial your mixture before an occasion.
Keep refrigerated or frozen to hold the colour. It stays liquid when frozen and should be brought to room temperature before use.
