Why Nut Butters & Spreads

Ground, not blended

Everything worth eating here is nuts put through a mill until the oil comes out of them. Nothing is added to stop that oil separating, which is why you stir the jar. Palm oil, emulsifiers and added sugar are in a supermarket jar to make it behave on a shelf, not to make it better.

The price follows the nut

Peanut butter starts under seven dollars because peanuts are a legume grown at scale. Almond and cashew sit in the middle. Hazelnut and macadamia are the expensive end because the nuts are. Nothing here is marked up for being fancy, it is just what the raw ingredient costs.

From a 235g jar to a 4kg pail

A small jar to find out whether you like macadamia with maple, a 1kg for a household that gets through it, and 2kg and 4kg catering pails that work out considerably cheaper per kilo. Same butter in all of them.
