DESCRIPTION

Kombu strips, the tougher cut of kombu with the most intense flavour for dashi and stock.

Wild New Zealand kelp from the North Island, laid flat and air dried. The fine white powder on the surface forms naturally as it dries and carries flavour, so do not wash it off. Pacific Harvest is a New Zealand seaweed company that tests its seaweed for contaminants and packs it here.

Ingredients

Kelp (Ecklonia radiata) dried seaweed 100%.

Instructions

Soak in water and let the flavour infuse, then use the liquid as dashi or stock for soups and sauces. One serve is about 125ml of made-up broth.
