Agar is most commonly used as a vegan alternative to gelatine, but it's an extremely versatile ingredient in the kitchen, particularly for those following plant based, raw food or egg free diets.
Read about the surprising health benefits Agar offers - it's very nutrient rich. For a hard set add 1 teaspoon per cup of liquid. Heat to 90 degrees centigrade and stir until disolved (don't boil excessively). Agar will expand upon rehydrating and set at room temperature.
