Spirulina, a blue-green algae, is one of the few things in nature that will give a genuine blue, and it is the whole basis of this bottle. Drawn out with water rather than solvents, it runs from a soft sky tone up to deep ocean the more you add.

Stir it through white icing, buttercream or jelly rather than baking it in, since heat pulls the tone out.

Instructions
This is a liquid concentrate, not a powder, so no mixing with water is needed. Shake the bottle before each use and add a drop at a time, stirring fully between additions, until the shade you want appears. Stockists suggest around half a teaspoon per 250g of pure white icing as a starting point; a white base gives the truest result, as a yellow butter base will shift the tone.

The colour works best in a slightly acidic mixture, so with alkaline ingredients such as egg and milk a little lemon juice or citric acid helps. Best used in icing, buttercream, fondant, jelly, frozen and raw desserts rather than baked into batter, as the colour fades with heat. Test your mixture before baking for an occasion.

Keep refrigerated or frozen to maintain intensity. The product stays liquid in the freezer and should be brought to room temperature before use.
