Instructions
This is a liquid concentrate rather than a powder, so it needs no dissolving. Shake before use and add a drop at a time, mixing through, until the depth of pink you want appears: a light hand gives pastel, more gives a bright pink. Stockists suggest roughly half a teaspoon per 250g of pure white icing as a guide, and a white base gives the cleanest result.

The colour holds best in a slightly acidic mixture; with alkaline ingredients such as egg and milk, a little lemon juice or citric acid helps. Best used in icing, buttercream, fondant, jelly and no-bake desserts rather than baked into batter, as heat fades the tone. Trial your mixture ahead of an important bake.

Keep refrigerated or frozen for colour stability. It stays liquid when frozen, so bring it to room temperature before use.
