Wild Mother makes living vinegars in the Huon Valley, southern Tasmania. Founder Dr Tim Jones, a scientist and one of Australia's most awarded cider makers, turned a long-held dream into a dedicated vinegar house inspired by the old-world vinegars of France and Italy. Every bottle starts with local cool-climate fruit, is fermented slowly with minimal intervention, and is left raw, unfiltered and unpasteurised, so the "mother" is still alive inside.
